- Egg plant – 1 big (black colour one is preferred)
- Onion – 1 medium
- Green chilly – 2
- Mustard oil – 1 tsp
- Coriander leaves – 1 tsp chopped
- Lemon juice – 1 tsp
- Salt – As per taste
Cut the brinjal in to 4 pieces with end point connected. Burn it in the gas stove in low flame till it is soft. Turn all the sides on the flame so that it is cooked evenly. Now let it cool for some time. Remove the black burnt skin from the brinjal. Mash the pulp.
Add chopped onion, chopped green chilly, chopped coriander leaves, salt, mustard oil and lemon juice into the pulp. Mix properly.
Serve with rice.
Note: you can add the burnt egg plant in water when it is hot to remove the skin easily.
